Pumpkin Pecan Pancakes











I almost never make plain pancakes. It's just too much fun adding ingredients and making different flavors. I have a go-to base recipe in my Better Homes and Gardens new Cookbook from 1953 that I usually reference and adjust as needed. This time I added pumpkin, spices, and pecans. I'm not very good at making perfect looking pancakes, but what they lack in beauty, they make up for in taste. What can I say? I'm setting up real pancake expectations. Enjoy!

1 cup flour
1 tablespoon baking powder
3 tablespoons maple syrup (yes, put it in the batter)
1/2 teaspoon salt
1 egg
1 1/4 cup milk
1/2 cup pureed pumpkin
1 teaspoon cinnamon
About 1/2 teaspoon freshly ground nutmeg or pumpkin pie spice
About 1/2 cup pecans or to taste 
1 tablespoon coconut oil or butter

Mix all ingredients in a bowl and ladle batter into a hot greased pan on medium heat. Flip when little bubbles start to form and the edges are firm. 
Makes enough for 2-3 people.
